Hot Cross Buns Recipe

Hot Cross Buns


 Bakers Flour 390g
Full cream Milk Powder 10g
Caster Sugar 40g
Salt 6g
Yeast dried 6g
Butter 34g
Eggs 24g
Mixed Spice 11g
Ground Cinnamon 2g
Ground cardamon 2g
Ground Cloves 2g
Water cold 202g
Soaked Raisans 90g
Sultanas 90g
Diced dried Apricots 40g
Candied Orange Peel 40g


Plain flour 50g
water 40g
Vegetable oil 18g
Salt fine 1g

Mix all ingredients in a mixer or by hand with whisk attachment until a paste is formed

  1. Place all dry ingredients into an electric mixer
  2. Add the liquids and mix until a smooth dough is achieved
  3. Add in dried fruits, mix gently to combine
  4. Place the dough in a large plastic container and ferment until double in size
  5. Tip the dough onto a bench and divide into 80g balls, mould into balls and place on a tray lined with baking paper.
  6. Place into the proofer and proof until a little over double in size
  7. Pipe with the cross mix, then bake at 200 degrees until golden
  8. Slide onto wire racks directly after removing from oven, and brush with the bun wash , ensuring a nice even coat all over the top of the buns so that they’re shiny, leave to cool

Orange skin 1each
Lemon skin 1 each
allspice 2g
Coffee beans 10g
Tonka 1/2 each
Cinnamon quills 1 Each

Bring all ingredients to boil, simmer for 10 mins, store covered in fridge until needed
